I usually do my post for the following day around 11pm the previous evening, then I change the time/date by clicking on the "Post Options" prompt at the lower left corner of the composition field. A date and time thingie will pop down from that. :)
You can even go back and change time and date on previous posts.
Also, if you do multiple posts in one day, the one that appears at the top of the blog will always be the most recently composed if you haven't altered the time/date sig.
